Overview

The fruit of American Persimmon is delicious! The sugar content is very high (~20%) and with a delicious persimmon flavor they are one of nature’s finest candies. Like other persimmons the wild American Persimmon fruit is juicy, soft and sweet when ripe. It is amazing eaten out of hand but can also be used to make all kinds of food, breads, pancakes, pies, cakes, cornbread, pudding, biscuits, treats, ice cream, and confections. If left to partially dehydrate the fruit reminds me of having a date texture with a tackiness that lends me to think it would be a good bonding agent and egg replacement in bars, cookies, breads and other confections.

American Persimmons can be dried, jammed and frozen. Because of its delicious flavor and high sugar content American Persimmons make great beer and wine.

The American Persimmon fruit is smaller than the cultivated varieties you may be used to. It is between 1 ½ – 2 inches on average. I hope you are not put off by the size because its flavor makes up for it. But if you are you may still consider planting this tree as a fodder tree for your livestock. Pigs, cows, chickens, turkeys, horses all love persimmons. The mature American Persimmon tree produces abundantly and when they are ripe the fruit will literally rain from the sky. Timing can vary from year to year but trees we collected from typically ripen around late October.

Native to Eastern United states, we are lucky to have access to some mature American Persimmons here on the west coast. The hardy tree is deciduous, grows quite tall (50-100 feet) and may develop root suckers. American Persimmon trees are dioecious so you will need at least one tree in each sex for the females to bear fruit with seeds. However, if un-pollinated most trees will set fruit without seeds.

American Persimmon seedlings can be used as grafting stock for desired cultivars.

“Native Americans extracted the pulp by rubbing the fruit through a sieve, then formed the pulp into sticks that were dried in the sun or in an oven. Alternatively fruits can be squashed and dried whole (but watch out for seeds). In dry autumn climates, fruits of some late-ripening cultivars can be left hanging on the tree into winter, when they turn sweet, dark and dry, resembling dates.”

Sowing Instructions

Seeds require 3 months cold stratification. Sow in pots/trays and keep slightly moist but not sopping wet through the winter and watch for germination in spring/summer. Alternatively stratify the seeds in the refrigerator in moist but not sopping sphagnum moss or coconut coir for three months and then place in pots or trays. Once sprouts are large enough, prick out into their own pots. Protect the trees from winter cold for their first year. Transplant in the fall or the following spring.
