As an Asteracea, Chicory is Dandelions cousin. Chicory is also known for its roots’ food and medicinal qualities. Like Dandelion, Chicory’s leaves are also quite edible and nutritive. Chicory flowers boast many, many beautiful splashes of blue-purple up its multiple flower stalks throughout the season.

As an Asteracea, Chicory is Dandelions cousin. Chicory is also known for its roots’ food and medicinal qualities. Like Dandelion, Chicory’s leaves are also quite edible and nutritive. Chicory flowers boast many, many beautiful splashes of blue-purple up its multiple flower stalks throughout the season.

All parts of the Chicory are edible: Leaves, stems, roots and flowers. Like Dandelion, Chicory roots and leaves are also bitter, though the younger leaves before Chicory flowers are noticeably less bitter. Try chicory roasted with other vegetables such as carrots, burdock, turnips or potatoes. The greens can be used in stews, pestos or steamed or sauteed with some onions, vinegar salt and pepper. Roasted chicory roots are used blended with coffee or as an herbal coffee substitute with additional health benefits and also make a good tea.

As a medicine Chicory root is traditionally prepared as a tea or decoction and used as a diuretic or aiding in the dissolving and removal of urinary stones and gravel. Chicory can aide in strengthening the stomach. Chicory leaves can be used as an external poultice for inflammation and swelling.

Chicory can be used as a blue natural dye.

Sowing Instructions

Sow in place ¼ inch deep in autumn or early spring in well prepared soil.
